Gluten Free Cinnamon Mocha Cupcakes

As a coeliac you shouldn’t have to miss out on the things you love to eat just because you can’t eat gluten. I plan to show you how to bake gluten free, cook gluten free and eat out gluten free. It’s easy when you know and I want to you to know.

Baking and cakes is something everyone loves, but making them gluten free isn’t always easy for those who don’t know. But if you do, it’s easy and fun!

By adapting simple recipes you can create anything.
I made gluten free Cinnamon Mocha Cupcakes and I’m going to show you how 🙂

These are some of my favourite cupcakes that I can make. They have a wonderful mocha flavour, they’re moist and soft. No one else in my family is a coeliac but they love them too.

So, without further ado, there’s the recipe:

Makes 12 large cupcakes

CUPCAKES
1/4 tsp coffee granules
60ml hot water
75g butter
150g golden caster sugar
1 egg, beaten
1/2 tsp vanilla extract
160g of plain flour (this would be a white mix from most of brands of gluten free foods) plus, 1/4 tsp xantham gum
30g cocoa powder
1 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
1/4 tsp ground cinnamon (although if you like cinnamon you might want to add more)
3 tbsp buttermilk

FROSTING
20g butter
25g plain chocolate
15ml milk
1 tsp instant coffee, dissolved in just enough hot water
200g icing sugar

METHOD:
1. Preheat the oven to 170oC. Mix the coffee granules with the hot water and leave to cool
2. Cream together butter and sugar. Beat in egg and vanilla. Combine dry ingredients. Add to creamed mixture. Then alternate the coffee and buttermilk when adding to the mixture.
3. Fill cases to just over 1/2 full. Bake 18-20 mind until a skewer comes out clean. Cool completely.
4. Heat the chocolate, butter and milk until chocolate melts, add the dissolved coffee. Stir the liquid into sifted icing sugar, gradually, until it reaches piping consistency, adding more milk if needed. Pipe on to cakes and decorate with a swirl of melted chocolate if desired.

So bake and enjoy! It’s a simple recipe and I hope you enjoy the cupcakes you make. I find that everything tastes better when you’ve baked it yourself, have fun.
